Ingredients:
- 2 cups whole raw cashews
- 1½ cups high-quality dark chocolate (70% cacao or higher), chopped
- 2 tbsp finely ground Dark Chocolate Truffle Coffee
- 3 tbsp Raw Cacao powder, for dusting
- 1 tbsp coconut oil
- Pinch of flaky sea salt
Instructions:
Toast the cashews — Spread cashews on a baking sheet and toast at 325°F for 8–10 minutes until lightly golden. Let cool completely.
Melt the chocolate — In a double boiler, melt dark chocolate with coconut oil, stirring until smooth and glossy.
Infuse with coffee — Stir in the finely ground Dark Chocolate Truffle Coffee into the melted chocolate. Let steep for 2 minutes, then strain if desired for a smoother texture.
Coat the cashews — Fold cashews into the chocolate mixture until fully coated.
Set on parchment — Spoon clusters onto a parchment-lined tray. Dust generously with Raw Cacao powder and a pinch of sea salt.
Chill — Refrigerate for 30–45 minutes until set.
