Chrysanthemum Rice Cake Ingredients:                                                                              

  • 16 oz glutinous rice flour cup warm water (105ºF)
  • 1 1/4 cup of brown sugar 
  • 2 tbsp extra olive oil
  • 1 1/4 cup of water
  • 3/4 cup Chrysanthemum tea (steeped from 5 tbsp leaves for 1 min)                          

Instructions:

Heat water and stir in brown sugar until fully dissolved. Mix in the Chrysanthemum tea, then allow the liquid to cool completely to room temperature. In a large bowl, combine the glutinous rice flour with the cooled tea mixture. Blend thoroughly until the batter is perfectly smooth. Gently fold in the extra olive oil. Pour the batter into a steamer-safe bowl. To remove air bubbles, lightly tap the bowl against the counter or use a toothpick to pop them. 

Bring the steamer water to a boil before placing the batter inside. Steam for 30 to 40 minutes. Test for doneness by inserting a toothpick; the batter should be fully solidified. Drain any excess water and allow the dish to cool before serving.
