Who says coffee is just for drinking? These golden, flaky sausage rolls are elevated with the bold, complex flavors of Funnel Mill roast coffee and Assam tea — turning a classic savory snack into something truly extraordinary.

Ingredients

For the Filling:

  • 1 lb ground pork sausage
  • 2 tbsp Funnel Mill roast coffee (finely ground)
  • 1 tsp Funnel Mill Assam tea (finely ground, such as Assam or Ceylon)
  • 1 small onion, finely grated
  • 2 garlic cloves, minced
  • 1 tbsp Dijon mustard
  • 1 tsp smoked paprika
  • ½ tsp fennel seeds
  • Salt & black pepper to taste
  • 1 egg (for binding)
  • ¼ cup breadcrumbs

For the Pastry:

  • 2 sheets puff pastry, thawed
  • 1 egg (for egg wash)
  • Flaky sea salt for topping

Coffee Mustard Dipping Sauce:


Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Make the filling — Combine ground pork, Funnel Mill roast coffeeFunnel Mill Assam tea, onion, garlic, mustard, paprika, fennel seeds, salt, pepper, egg, and breadcrumbs. Mix until just combined — don't overwork.
  3. Assemble — Cut each puff pastry sheet into 2 long rectangles. Spoon the filling in a log shape along one edge of each rectangle. Roll tightly and seal the edge with egg wash. Slice into 3–4 inch pieces.
  4. Egg wash & season — Brush tops with egg wash and sprinkle with flaky sea salt.
  5. Bake for 22–25 minutes until deep golden brown and cooked through.
  6. Make the dipping sauce — Whisk together mustard, cold brew concentrate, honey, and vinegar. Adjust to taste.
  7. Serve warm with the coffee mustard dipping sauce on the side.
