Meatball with Funnel Mill Roast Ingredients:
- 3/4 cup brewed Funnel Mill Roast coffee, divided
- 1/2 tsp ground Funnel Mill Roast coffee
- 1 ½ lb lean ground beef
- 1 large egg
- 3/4 cups finely crushed tortilla chips
- 1/2 tsp salt
- 1 ½ tsp ground cinnamon
- 1 ½ tsp Raw Cocoa powder
- 3 cloves garlic, minced, divided
- 28 oz crushed tomatoes
- 1-2 Chipotle peppers in Adobo Sauce, minced
- 2 tsp oilver oil
- 1 cup red onion, minced
- 1 tsp ground cumin
- 1/2 cup beef broth
- 2 tbsp honey
Instructions:
Crush tortilla chips in a high-speed blender. In a large bowl, mix ground beef, egg, crushed tortilla chips, salt, cinnamon, ground Funnel Mill Roast coffee, Raw Cocoa powder, and half of minced garlic, and 1/4 cup brewed Funnel Mill Roast coffee. Then blend ingredients with hands and form 3/4 in meatballs. In a low-speed blender, mix crushed tomatoes and minced Chipotle peppers until smooth.
In a 5 qt Dutch oven or non-stick pan, heat oilver oil on medium heat, add onion and remaining minced garlic, cook 4- 5 minutes. Stir in cumin, tomatoes with Chipotle peppers, broth, honey and 1/2 cup remaining brewed Funnel Mill Roast coffee. Heat mixture to a boil over high heat and add meatballs. Reduce heat to low and cook meatballs and sauce for 30 to 40 minutes. Garnish with dry cilantro and steam vegetables of your choice.
