This showstopper comes via El Vergel's partner-series, a curation system in which El Vergel (one of Colombia's most famed estates) scours the country for its best producers and most unique lots. It's a Caturron coffee, super rare and downright kaleidoscopic in flavor. Caturron is a mutation of Caturra. You can't find it outside Colombia; even within the country, it's pretty much a unicorn. As if that weren't distinguishing enough, it was processed via an anaerobic offshoot, aptly called, "Wild." The Wild processing involves 150 hours (that's right 150 hours!) of oxygen-suppressed fermentation. Following that? A speedy temperature-controlled drying phase. It's bombastic, intense, iconoclastic—wild is the word.
Strawberry plays the overture here (you guessed it, the wild variety). It's got sweetness, tang, sugar, effervescence. It gives way to melon and pineapple. Blackberry rides the cool, making a showy appearance and lending to the fruit-forward style. But there's another flavor here that's downright abstract... the wild note. This coffee packs it, a big untamed cymbal clash that undergirds everything. It's not for the faint of heart, but if you're looking for a brew that spins heads and broadens horizon, this is your guy.
